Apple Pork Roast

Tender pork roast glazed with apple balsamic vinegar... a perfect balance of savory and sweet with a subtle tangy finish.
INGREDIENTS
- 2 lbs. boneless pork roastÂ
- â cup apple juice concentrate
- 2 tbsp Apple Balsamic Star
- 1 tbsp honeyÂ
- 1 tbsp Dijon mustardÂ
- 1 tsp soy sauceÂ
- ½ tsp dried marjoram
- pepper to taste
- Âź tsp paprikaÂ
- 3 apples, cored and wedgedÂ
- 1 tbsp cornstarch
DIRECTIONS:
- Preheat oven to 375°. Combine first 8 ingredients in a bowl and marinate in the refrigerator for a minimum of 20 minutes.Â
- Place the roast in a roasting pan and brush the mixture over the pork. Roast 45 minutes at 375°, basting occasionally with the apple juice mixture.Â
- Add apple wedges to the roasting pan and continue to roast 30-45 minutes, or until a meat thermometer reads 160°F.
- Remove the roasting pan from the oven and while the roast rests, strain juices into a saucepan.Â
- Add enough water to equal 1 cup. Make a cornstarch slurry with 1 tbsp of water. Add to saucepan and stir over high heat until thickened and bubbly. Slice the roast and serve with apples and sauce.
