Vegetable Frittata

A simple frittata with your favorite fresh veggies that's perfect for any meal, from brunch to dinner.

INGREDIENTS:

  • 1 cup chopped green asparagus
  • 1 small zucchini, chopped (Add more veggies of your choice)
  • 1 onion, diced
  • 2 tbsp vomFASS Garlic Extra Virgin Olive Oil
  • 1 handful of chives
  • ½ bunch flat-leaf parsley
  • 4 organic eggs
  • ½ cup ricotta
  • Splash of milk of choice
  • Pink Himalayan Salt and Garlic Pepper to taste
  • Feta Cheese

DIRECTIONS:

  1. Preheat the oven to 350F.
  2. Start your pan on the stove. Heat vomFASS Garlic Extra Virgin Olive Oil in a cast iron pan.
  3. Start by sautéing your veggies. In a bowl, crack your eggs, add your milk and ricotta, then season with salt and pepper.
  4. Sprinkle your fresh herbs, then pour the egg mixture over the veggies.
  5. Place the pan in the preheated oven and bake for approx. 25 mins. until the eggs have set.
