Vegetable Frittata

A simple frittata with your favorite fresh veggies that's perfect for any meal, from brunch to dinner.
INGREDIENTS:
- 1 cup chopped green asparagus
- 1 small zucchini, chopped (Add more veggies of your choice)
- 1 onion, diced
- 2 tbsp vomFASS Garlic Extra Virgin Olive Oil
- 1 handful of chives
- ½ bunch flat-leaf parsley
- 4 organic eggs
- ½ cup ricotta
- Splash of milk of choice
- Pink Himalayan Salt and Garlic Pepper to taste
- Feta Cheese
DIRECTIONS:
- Preheat the oven to 350F.
- Start your pan on the stove. Heat vomFASS Garlic Extra Virgin Olive Oil in a cast iron pan.
- Start by sautéing your veggies. In a bowl, crack your eggs, add your milk and ricotta, then season with salt and pepper.
- Sprinkle your fresh herbs, then pour the egg mixture over the veggies.
- Place the pan in the preheated oven and bake for approx. 25 mins. until the eggs have set.
