Chopped Salad with Green Goddess Dressing

Creamy, bright, and full of fresh flavor, this salad is easy and delicious!

INGREDIENTS:

  • 1 cup spinach
  • 1/3 cup raw almonds
  • Juice from one large lemon
  • 1 large shallot
  • 2 cloves of garlic
  • ¼ cup grated Parmesan or nutritional yeast for vegan alternative
  • 2 tablespoons Calamansi Balsam
  • ¼ cup vomFASS Extra Virgin Olive Oil of your choice

DIRECTIONS:

  1. Cut a half a head of cabbage toss in bowl. Add cucumbers and green onions too.
  2. To make the dressing, add Spinach, almonds, shallot, garlic cloves, juice from one lemon, calamansi balsam, olive oil, parmesan or nutritional yeast to blender and blend.
  3. Pour dressing over the cabbage and cucumbers, mix, and serve.
