With a delightful crunch in every bite, this tasty cauliflower treat makes a great snack or side dish.
INGREDIENTS FOR NUGGETS:
- 1 cauliflower, cut into bite-sized florets
- ½ cup flour
- 2 eggs
- ¾ cup breadcrumbs
- ⅓ cup grated cheese (Parmesan or Gouda)
- 1 tsp smoked paprika powder
- 1 tsp BBQ rub
- Pink Crystal Salt to taste
- Garlic Pepper to taste
INGREDIENTS FOR THE DIP:
- ¾ cup Greek yogurt
- 1 tbsp Jalapeño Extra Virgin Olive Oil
- A splash of Wild Mango Balsamic Star
DIRECTIONS:
- Wash the cauliflower florets, let them drain well, and cut them into bite-sized pieces. Toss them with smoked paprika powder, BBQ rub, salt, and pepper to season.
- First, coat the seasoned florets in flour. Then, dip them into the beaten eggs. Finally, roll them in the breadcrumb-cheese mixture until evenly coated.
- Heat oil in a skillet over medium heat and fry the nuggets until golden and crispy on all sides.
- In a small bowl, mix Greek yogurt, Jalapeno Oil, and a splash of Wild Mango Balsamic Star. Adjust seasoning to taste.
- Plate the crispy cauliflower nuggets with the tangy dip and enjoy!
