Shrimp & Asparagus Orzo

Succulent shrimp and tender asparagus mingle with delicate orzo pasta to create this elegant spring dish.

INGREDIENTS:

  • ⅔ cup green asparagus
  • ½ cup orzo (or rice noodles)
  • ⅔ cup shrimp (peeled and deveined)
  •  1-2 tbs Lemon Extra Virgin Olive Oil
  • 1 garlic clove (finely chopped)
  • 1 small onion (diced)
  • 1 lemon (zest)
  • Pink Crystal Salt
  • Orange Pepper
  • Fresh parsley or basil for garnish
  • A little vegetable broth or white wine for deglazing

DIRECTIONS:

  1. Sauté the Shrimp: Heat the lemon oil in a large pan. Add the shrimp and sauté for 2-3 minutes until they turn pink and are fully cooked. Remove them from the pan and set aside.
  2. Sauté Onion and Garlic: In the same pan, add the diced onion and chopped garlic. Sauté over medium heat until softened and fragrant.
  3. Add Orzo and Broth: Add the orzo (or rice noodles) to the pan, followed by a little vegetable broth or white wine. Stir everything together to combine.
  4. Cook the Asparagus: Add the asparagus to the pan and cook for 3-4 minutes, until it’s crisp-tender and lightly browned.
  5. Reintroduce Shrimp and Season: Add the cooked shrimp back to the pan and stir everything together. Season with salt and pepper.
  6. Garnish with fresh herbs and a sprinkle of lemon zest for extra flavor.
  7. Serve: Serve the dish hot and enjoy!
