Shrimp & Asparagus Orzo

Succulent shrimp and tender asparagus mingle with delicate orzo pasta to create this elegant spring dish.
INGREDIENTS:
- ⅔ cup green asparagus
- ½ cup orzo (or rice noodles)
- ⅔ cup shrimp (peeled and deveined)
- 1-2 tbs Lemon Extra Virgin Olive Oil
- 1 garlic clove (finely chopped)
- 1 small onion (diced)
- 1 lemon (zest)

Pink Crystal Salt
- Orange Pepper
- Fresh parsley or basil for garnish
- A little vegetable broth or white wine for deglazing
DIRECTIONS:
- Sauté the Shrimp: Heat the lemon oil in a large pan. Add the shrimp and sauté for 2-3 minutes until they turn pink and are fully cooked. Remove them from the pan and set aside.
- Sauté Onion and Garlic: In the same pan, add the diced onion and chopped garlic. Sauté over medium heat until softened and fragrant.
- Add Orzo and Broth: Add the orzo (or rice noodles) to the pan, followed by a little vegetable broth or white wine. Stir everything together to combine.
- Cook the Asparagus: Add the asparagus to the pan and cook for 3-4 minutes, until it’s crisp-tender and lightly browned.
- Reintroduce Shrimp and Season: Add the cooked shrimp back to the pan and stir everything together. Season with salt and pepper.
- Garnish with fresh herbs and a sprinkle of lemon zest for extra flavor.
- Serve: Serve the dish hot and enjoy!
