Pistachio Bruschetta

A fun twist on the classic Italian appetizer that's easy to make and looks (and tastes) impressive enough to serve to guests.
INGREDIENTS:- 1 French baguette, sliced diagonally into ¼ inch thick slices
- 3 cloves garlic, minced
- 1 cup Don Carlos Extra Virgin Olive Oil
- smoked Gouda cheese, shredded
- 4 tbsp. Raspberry Balsamic Vinegar
- 8 tbsp. Pistachio Oil
- 4 Roma tomatoes, seeded and diced small
- 4 tbsp basil, chiffonade
- Salt & Pepper, to taste
- Preheat oven to 350°. Infuse garlic with Extra Virgin Olive Oil and brush oil on each sliced baguette.
- Sprinkle Gouda cheese on top of the baguettes and toast in oven for 7-8 minutes.
- While toasting the baguettes, prepare the tomato topping by mixing together diced tomato, vinegar, Pistachio Oil, and Salt & Pepper, to taste. Set aside.
- Place tomato mixture on top of each toasted baguette and garnish with basil. Before serving, drizzle with Pistachio Oil, to taste.
