Pineapple Old Fashioned

A tropical twist on the old classic with the perfect balance of sweet and smoky.
INGREDIENTS FOR SYRUP:
- 1 cup water
- 1 cup white sugar
- 3 dashes aromatic bitters
- 2 cups of fresh pineapple core and outside peel pieces
DIRECTIONS FOR SYRUP:
- Bring water to a boil in a saucepan over medium heat.
- Add sugar and stir until dissolved.
- Add the pineapple core and several outside rind pieces to the pot. Stir and cook for 10 minutes.
- Remove from heat. Allow the mixture to cool to room temperature.
- Remove the large pineapple pieces with tongs and strain the syrup through a fine mesh strainer.
INGREDIENTS FOR COCKTAIL:
- 2 oz Two Georges High Corn Bourbon
- ½ oz pineapple syrup (recipe below)
- 3 dashes aromatic bitters
- Fresh pineapple slices (garnish)
DIRECTIONS FOR COCKTAIL:
- In a mixing glass half filled with ice, combine bourbon, pineapple syrup and aromatic bitters.
- Stir for 10 seconds until well chilled.
- Strain into a rocks glass filled with ice or one large ice cube.
- Garnish with a slice of fresh pineapple. Sip and enjoy!
