These mashed potatoes are creamy and absolutely delicious. A combination of fresh garlic and our Garlic Extra Virgin Olive Oil give these dairy-free vegan mashed potatoes their great flavor and texture, so there’s no need for butter or cream.
1. Bring water to a boil in a large saucepan. Add potatoes, garlic and 2 teaspoons salt and cook at a brisk simmer until potatoes are tender, about 15 minutes.
2. Drain potatoes and garlic, reserving 1 cup of cooking liquid. Mash potatoes and garlic. Beat in Garlic Extra Virgin Olive Oil and then thin to desired consistency with reserved cooking liquid. Season to taste with Mama Knows Best.
3. Sprinkle with fresh herbs - we used parsley and sage. Check seasoning and serve.
